Serving bacon, eggs and pancake during breakfast may be ordinary for some families but not for us. Since we started watching my husband’s cholesterol levels our menu changed into low fat and low cholesterol food products, which means no bacon or fatty food products for us. After several months of fish, chicken, veggies and lean meat menu we all started craving for old time favorites like bacon and pork chop. With his recent lab results showing good cholesterol levels, we decided to give in to our cravings just once this morning.
I woke up early to prepare wheat pancakes, sunny side-up eggs and bacon for my loved ones. To lessen the guilt for indulging in our fatty cravings I prepared wheat pancakes and fried egg whites only for my husband. Wheat pancakes are low-fat and high in fiber while eggs are good sources of protein. I fried the bacon into crisp strips just like the ones I used to enjoy with my sisters. The smell of frying bacon was so good that my husband abandoned his mens shaving brushes and helped set the table with a few stubbles on his chin. He didn’t mind having egg whites only as long as he gets two crispy strips of the wonderful bacon that we have missed so much. It may be quite a while again before we get to enjoy the same breakfast menu, so we all savored the scent and taste of our freshly cooked bacon, eggs and pancake.
