FoodieMom featured several articles about cupcakes last year. There were some that we loved and also others that were simply passable. Just like bread and pastry, I just couldn’t stop writing about cupcakes. So, here is our first cupcake feature of the year, Mom & Tina’s Cupcakes.
Mom & Tina’s Bakery Café serves traditional home cooked meals, pastries and other baked goodies. They have cozy interiors that can make you feel at home while enjoying both their meals and desserts. About a week ago, I came to visit their shop for some meringue tubs to be given away as tokens and I couldn’t resist buying some of their muffins and cupcakes. Even though, I wanted to get all their cupcake varieties that day, I just contented myself with 3 cupcakes and 1 muffin to snack on. Cakes and pastries are best consumed when they are freshly baked so I make it a point to only buy enough goodies that can be eaten within the day. My foodie loot comprised of 1 Mocha Butter Crème Cupcake, 1 Mandarin Orange Butter Cupcake, 1 Carrot Cupcake, and a Pecan Chocolate Chip Muffin.
I loved the light chiffon butter cake and subtle flavors of mocha and orange in the frostings of the Mocha Butter crème and Mandarin orange cupcakes. The tastes and textures of cake and frosting complement each other so well that I could probably eat a dozen of them in one sitting. Aside from personal consumption, these goodies can also be great as care packages or tokens for special occasions like Valentines or Easter. The Carrot Cupcake and Pecan Chocolate Chip Muffin tasted good also but I don’t think I can eat a dozen of them in one sitting. Mainly because they are much heavier than the other two cupcakes and they are packed with their key ingredients. You are sure to savor the rich and sweet taste of chocolate chips in every bite of the muffin and find bits and pieces of carrots and pineapple as you sink your teeth into the carrot cupcake. Overall we give Mom and Tina’s cupcakes a thumbs-up for their great tasting cakes that we would love to share with our friends and loved ones.
