The Bicol Region Cuisine is known for its spicy flavors and the use of the coconut oil in cooking. Bicol express and Laing are two of the most popular dishes that come to mind when we talk of the Bicolandia. But there are also other recipes that will let you enjoy the flavors of Bicol without burning your tongue. One such dish is the Ginataang Liswik.
This dish is pretty much like the Guinataang Kuhol of the Tagalog Region. The Liswik or conch is a sea snail that locals or seaside residents gather at low tide and just like any seafood, it is best when cooked fresh. The recipe is quite simple, just sauté garlic, onion, and a sliver of ginger then add coconut oil. Simmer oil then add the snails and let simmer for a few minutes then add swamp cabbage. Season with salt and pepper and remove from heat once the cabbage is cooked. The result is a sweet salty dish with chewy snail meat infused in rich and creamy coconut sauce with some nutritious greens on the side. These are hometown flavors that keep us coming back for more.
